  • 5 Tbsp
    coconut oil
  • 6 large
    carrots, fresh, chopped
  • 4 large
    potatoes, fresh, chopped
  • 1 medium
    cauliflower, fresh, separated into small florets
  • 1 lb
    green beans, fresh, chopped
  • 2 large
    red bell peppers, fresh, chopped

  • 1 Tbsp
    cumin seeds
  • 1/2 Tbsp
    ginger, fresh, finely chopped
  • 1/2 Tbsp
    garlic, fresh, finely chopped
  • 2 large
    onions, fresh, chopped
  • 3 large
    tomatoes on the vine, fresh, chopped
  • 1 tsp
    turmeric, ground, store-bought
  • 1 tsp
    kashmiri red chilli, ground (adds color but not too much heat: can be found at indian grocery stores)
  • ·
    salt to taste
  • 1 c
    half and half, fat-free
  • 1/2 c
    yogurt, low-fat, plain
  • ·
    cashews or walnuts, unsalted, handful, soaked in warm water for 5-10 min and ground to a fine paste
  • 2 tsp
    garam masala, ground, store-bought

  • ·
    cilantro, fresh for seasoning

How to Make A Creamy Medley of Veggies


  1. Heat a huge vessel/stainless dish/crock-pot on the stove and add 3 tbsp of coconut oil to it. Once the oil heats up, stir in all the vegetables (cubed/ slightly bigger chunks) starting with carrots, potatoes and ending with red bell peppers, one at a time and fry for about 10 min.
  2. Turn off the stove,transfer this vegetable mixture into another dish and continue cooking with the same crock-pot/any huge vessel.
  3. Now add 2 tbsp of coconut oil to the pot. Add cumin seeds and wait for them to crackle. Once done, add ginger and garlic and fry for a couple of minutes until all the raw smells go away.
  4. Stir in onions and fry till translucent for a couple of minutes. Then add the tomatoes and fry for a couple of more minutes.
  5. Now add chill powder, turmeric powder and salt and fry for a minute before adding yogurt, half-and-half and cashew/walnut mixture.
  6. Once it starts boiling, stir in the vegetable mixture and let it simmer for 10 min. Now add garam masala and a pinch of sugar to enhance the taste.
  7. Finally, turn off the heat when the entire mixture had boiled well and sprinkle cilantro on top before serving.
  8. Tips:
    1. Keep stirring as the vegetables have an annoying tendency to stick to the base of the pots :)
    2. I used walnut paste: more healthy but you can use cashew paste: it adds more flavor.
    3. You are welcome to even add a pinch of "Kitchen King Masala" which can be found in the spices aisle at any Indian Store.
