Seldom do I add a recipe to my list if I don't absolutely LOVE it, or some such redeeming quality, but I so rarely find a vegetarian recipe that I want to try. . . So, when this one turned out ok, I decided to keep it. And when I shared it with my vegetarian friend, modifying it, I found it to be entering the realm of delish. I found this recipe on the Page-a-Day calendar (Recipes / 2013). I added the cheese and the salsa (my own recipe), but if anyone comes across another ingredient that makes it better, let me know!

Ingredients For sweet potato burritos

  • 2
    sweet potatoes
  • 3/4 tsp
    ground cumin
  • 1/2 tsp
    ground coriander
  • 1/2 tsp
    garlic powder
  • 1/4 tsp
    pepper
  • 1
    lime, juiced
  • 15 oz
    black beans, rinsed
  • 1 c
    corn kernels
  • 1/2 tsp
    salt
  • 6 - 10
    tortillas
  • 1 c
    cheddar
  • salsa

How To Make sweet potato burritos

    Pierce the sweet potatoes with a fork, place on a baking sheet and bake at 400*F for 40 - 60 minutes, depending on the size of the sweet potatoes; let cool.

    Reduce oven heat to 350*F. Scoop the insides out of the potatoes into a bowl and mash with the spices and lime juice. Stir in the beans and corn. Add salt to taste. Spoon the mixture in the tortillas along with any optional fillings you desire. Roll up and bake for 20 minutes.

    Sprinkle with cheddar and bake another 5 minutes.

    Serve with salsa.
