In honor of National Panini Month! This is a Caprese-Style Panini, fusing Mexican and Italian flavors, using cotija cheese instead of mozzarella, and spicing it up with horseradish. Tomato adds the necessary refreshing part and the basil is just necessary, period, lol.

Ingredients For horseradish cotija caprese panini

  • 2 slice
    honey wheat bread
  • 1 Tbsp
    horseradish cream spread (i used helluvagood)
  • 2-3 slice
    tomato
  • 3-5 slice
    cotija cheese
  • 3-4
    fresh basil leaves

How To Make horseradish cotija caprese panini

    Slice 3 slices tomato and 3-5 slices cotija cheese (depends how much cheese you personally like.. this is a salty cheese so think about that before you pile on 7 slices!). Set aside.

    In panini pan, heat up olive oil. First lightly toast both sides of both slices of bread.

    On one slice, assemble the horseradish spread, cotija cheese, tomato and basil.

    Cover with the less-toasted side of the other slice of bread. Set a weight on top (I used this loaf pan). Toast in pan for 1-2 minutes.

    Flip sandwich and toast (un-weighted) for 2 minutes on the other side.
