We love Mexican food and chicken fajita is a favorite of ours. This is a quick and delicious dish that your family is sure to love. It has wonderful flavor! You can even cut and season the chicken the night before and refrigerate to make meal prep even easier and faster the next day. Great for the working cook. This recipe is great using pork or beef, too!

    chicken breasts, boneless and skinless
  • 1 lg
    bell pepper, sliced (or 2 small ones of different colors)
  • 1 lg
    onion, halved and sliced
  • 1
    tomato, diced
  • 1 tsp
    red fajita seasoning
  • 1 tsp
    Adobo seasoning
  • 1-2 Tbsp
    cooking oil

Test Kitchen Tips
The onions and peppers are cooked to your preference. We added about 1/4 cup of water to the pan and a top while the peppers/onions cooked to help steam them. We suggest adding the tomatoes and seasonings once they're cooked to your liking to not overcook the tomatoes.
  • Seasoned chicken in a bowl.

    Cut chicken breast into thin 2-inch long strips. Add 1/2 tsp fajita seasoning and 1/2 tsp Adobo seasoning. Mix well and then set aside. Wash hands.
  • Slicing onion, peppers, and tomatoes.

    On a different cutting board (I have one that is for meat only and another for veggies), slice onion, bell pepper, and dice tomato.
  • Cooking the chicken in a skillet.

    Heat a large skillet on high heat then add oil and chicken. Sautee chicken until cooked through.

    Add sliced peppers and onions and cook for 5-8 minutes.

    Add diced tomato and 1/2 tsp fajita seasoning and 1/2 tsp Adobo seasoning. Cook until peppers and onions are tender (2-3 minutes).

    Serve with warm flour tortillas.
