One day I was wondering how to make my meatloaf more exciting and came up w/ this. Hope you enjoy!!

Ingredients

  • 1/3 c
    spicy bbq sauce
  • 2
    canned chipotle chiles, seeded
  • 1 Tbsp
    adobo sauce from canned chiles
  • 2 large
    eggs
  • 1 Tbsp
    worcestershire sauce
  • 1/2 tsp
    each, salt and pepper
  • 2 tsp
    minced garlic
  • 1
    onion, chopped
  • 1-1/2 lb
    ground turkey breast or lean ground beef
  • 1 c
    quick cooking oats
  • 3 Tbsp
    ketchup

How to Make Spicy chipotle meatloaf

Step-by-Step

  1. Heat oven to 350. Lightly spray a 9" x 5" loaf pan w/ cooking spray. In bowl, combine BBQ sauce, chipotle chiles, adobo sauce, eggs, worcestershire sauce, salt and pepper. Whisk well.
  2. Add garlic, onion, turkey and oats. mix well w/ clean hands. Pack mix into pan gently. Bake 45 mins.
  3. Spread ketchup on top of loaf. Bake 10 more mins.
