    rabbits,cut up
  • 15 oz
    sliced mushrooms
  • 1 medium
    onion, sliced
  • 15 oz
    tomato sauce
  • 1/4 c
  • ·
    garlic salt, to taste
  • ·
    black pepper
  • 2 Tbsp
    vegetable oil
  • 1/2 tsp
    oregano, dried
  • 1/4 tsp
    ground garlic
  • 1 medium
    green pepper, sliced into strips
  • 1
    rib of celery, chopped
  • 1 1/2 oz
    ripe, sliced black olives

How to Make Rabbit Cacciatore


  1. Shake the rabbit pieces in a bag with flour, salt and pepper. In a large skillet saute the pieces in oil until golden brown.
  2. Add the remaining ingredients, except for the olives. Cover and simmer over low heat about 1 hr., or until the rabbit is tender.
  3. Stir in black olives simmer 10 mins. more.

    Serve with rice or noodles if desired.
