Using this season's garden vegetables and fruits has been a joy! I try very hard to never throw away these precious foods and find ways to use them in all dishes, including the one I created this morning. I had tortillas left from another meal and asked my hubby to make his much loved scrambled eggs. My plan was to make breakfast burritos. However, I decided to try the concept of combining scrambled eggs, tortillas, veggies into a frittata quesadilla. This turned out fine made on the stovetop, but I will also try in the oven. My hubby loved the flavors and doesn't care how it was cooked!

What a yummy breakfast frittata! It's great if you're serving a crowd. Cheesy with traditional breakfast items we love like turkey bacon, bell peppers and cheese. This will quickly become a family favorite.

Ingredients For southwest breakfast frittata quesadilla

  • 4 slice
    turkey bacon or other meat, diced
  • 4-6 lg
    eggs (I combined with Eggbeaters- not necessary)
  • 1/2 md
    bell pepper, diced
  • 1/2 md
    onion, diced
  • 1 Tbsp
    fresh rosemary, minced
  • 2 md
    tomatoes, chopped
  • 3 md
    flour tortillas
  • 2 Tbsp
    salsa or more (we made ours)
  • 3/4 c
    cheese, shredded (Colby jack) (your choice)
  • 1/4 tsp
    garlic salt
  • 1/4 tsp
  • 1/2 tsp
  • 2 Tbsp
    olive oil, light
  • 2 Tbsp
    butter, unsalted

How To Make southwest breakfast frittata quesadilla

  • Sauteeing turkey bacon, bell pepper, onion, and seasonings in a skillet.
    Saute on medium-high heat: Turkey bacon, bell pepper, onion, rosemary, garlic salt, pepper, and salt in olive oil for about 7-min; cover with a lid for 3-min.
  • Turkey bacon mixture mixed with salsa in a bowl.
    Place into a bowl and stir in salsa.
  • Tortilla added to the skillet.
    Using the same pan, lower heat to medium heat, add butter, spread around pan, lay 1 tortilla in the bottom.
  • Cheese sprinkled on top of the tortilla.
    Add cheese top of tortilla.
  • Some of the turkey bacon mixture on top of the cheese.
    Then add half of the meat mixture on top of cheese.
  • More cheese added to the skillet.
    Add more cheese.
  • A second tortilla placed in the skillet.
    Then another tortilla. Repeat another layer of cheese, meat mixture, cheese, and last tortilla. (Cheese acts as adhesive to keep quesadilla together.)
  • Diced tomatoes sprinkled onto the tortilla.
    Spread fresh tomatoes over top of quesadilla.
  • Whisked eggs poured into the skillet.
    Whip eggs with 2-tablespoons water. Pour over the quesadilla and tomatoes; cover pan.
  • Frittata cooking until eggs are set.
    Turn the burner down to high-low heat; cook until egg is set.
  • A slice of Southwest Breakfast Frittata Quesadilla with fresh fruit.
    Slice and serve with favorite fruit!
