Years ago I started making small changes to our taco night. I switched us from ground beef to lean ground turkey or chicken. Honestly, it's healthier and I don't think my family has any idea that I do this (sshhh don't tell). I also like to skip a side dish and really cram everything into the actual taco. Sometimes it's black beans. Sometimes rice, corn or any combo of them together.Lately I've been switching up the flavors by changing the type of salsa I use. Tonight I used Mango/Peach salsa and the sweetness of the fruit gave such a nice balance to the taco. By all means use a regular
