It was warm here today, so I decided to make our favorite club sandwich...this sandwich is similar to one we served at the restaurant I used to manage...I hope you enjoy it as much as we do...

Ingredients

  • 3/4 c
    mayonnaise
  • 1 clove
    garlic, fine minced
  • 1/2 - 1 tsp
    dry, chipotle red pepper - or to taste
  • 1/4 tsp
    smoked paprika
  • 1/4
    tsp cumin
  • 1 1/2 - 2 lb
    deli, smoked turkey or smoked ham - or both
  • large
    tomato, sliced thin
  • medium
    sweet onion, sliced thin
  • 8 slice
    pepper jack or hot pepper cheese
  • 16 slice
    bacon, cooked crisp
  • 1 - 2
    avacado's - peeled, cut in half and sliced thin
  • 8
    leaf lettuce
  • 12 slice
    bread - toasted - the larger the bread the better - my favorite is sour dough
  • ·
    salt and pepper
  • 4
    extra long toothpicks per sandwich

How to Make Awesome Club

Step-by-Step

  1. In a small bowl, mix your mayonnaise, garlic, cumin, Chipotle pepper and smoked paprika. Set aside.
  2. Toast 3 slices of bread. On the first slice, spread about one tablespoon prepared mayonnaise. Add 3 - 4 slices turkey, 2 slices bacon, a couple tomato slices,( salt and pepper if desire.) a couple rings onion, lettuce, cheese and 3 - 4 thin slices of Avacado.
  3. Spread second piece of toast with Mayonnaise and place on top. Repeat layer of ingredients one more time. Spread mayonnaise on the last piece of toast and place it on top.

    Place a toothpick about an inch from each corner of sandwich. Try to find the extra long toothpicks.
    Cut from corner to corner diagonally into 4 triangles, being careful that sandwich doesn't slide. ( Or you can just cut the sandwich in half.)
  4. Place all four triangles on serving plate, sitting them on their crusts.
