Cheddar-Corn Impossible Pie is perfect for a quick and easy spring dinner. One that will get you oohs and aahs from your family. Loaded with veggies and scrumptious bacon, I can’t wait to make this one again!!

dry bread crumbs

bacon, cooked and crumbled
1 c
shredded mild cheddar cheese
1 small
onion, finely diced
half sweet red bell pepper, diced
1 c
corn kernels
1/4 tsp
1 pinch
1 pinch
cayenne pepper
1/2 c
all-purpose flour
1 tsp
baking powder
2 Tbsp
4 large
2 c
whole milk

How to Make Cheddar-Corn Impossible Pie


  • 1Preheat oven to 350 degrees.

    Grease 10-inch quiche pan or pie plate; sprinkle with bread crumbs.
  • 2Combine bacon, Cheddar, onion, red pepper, corn, pepper, salt and cayenne; sprinkle over bread crumbs.
  • 3In bowl, stir together flour and baking powder; cut in shortening until in fine crumbs.
  • 4Add eggs and milk; whisk just until smooth.
  • 5Pour over bacon mixture.
  • 6Bake for 45 to 50 minutes or until knife inserted near center comes out clean.
  • 7Let stand for 5 minutes. Serve.
