Cheddar-Corn Impossible Pie is perfect for a quick and easy spring dinner. One that will get you oohs and aahs from your family. Loaded with veggies and scrumptious bacon, I can’t wait to make this one again!!

  • 2 Tbsp
    dry bread crumbs
  • 10 slice
    bacon, cooked and crumbled
  • 1 c
    shredded mild cheddar cheese
  • 1 small
    onion, finely diced
  • 1
    half sweet red bell pepper, diced
  • 1 c
    corn kernels
  • 1/4 tsp
  • 1 pinch
  • 1 pinch
    cayenne pepper
  • 1/2 c
    all-purpose flour
  • 1 tsp
    baking powder
  • 2 Tbsp
  • 4 large
  • 2 c
    whole milk

How to Make Cheddar-Corn Impossible Pie


  1. Preheat oven to 350 degrees.

    Grease 10-inch quiche pan or pie plate; sprinkle with bread crumbs.
  2. Combine bacon, Cheddar, onion, red pepper, corn, pepper, salt and cayenne; sprinkle over bread crumbs.
  3. In bowl, stir together flour and baking powder; cut in shortening until in fine crumbs.
  4. Add eggs and milk; whisk just until smooth.
  5. Pour over bacon mixture.
  6. Bake for 45 to 50 minutes or until knife inserted near center comes out clean.
  7. Let stand for 5 minutes. Serve.
