Ingredients For slow cooker pork chops w/ ed's spice rub

  • 2 lg
    pork chops, double-thick
  • 2 lg
    carrot, sliced
  • 1 stalk
    celery stalk,sliced
  • 1 sm
    onion,sliced
  • 3 clove
    garlic,whole
  • 3 sm
    bay leaves, dried
  • 2 Tbsp
    ed's dry rub(see recipe below and on my page)
  • 1 pinch
    salt and pepper
  • 2 Tbsp
    olive oil
  • 1 1/2 c
    chicken stock,low sodium
  • 1/2 c
    dry white cooking wine or dry white wine
  • ED'S DRY RUB
  • 2 Tbsp
    salt sense (lower sodium salt or you can use regular)
  • 2 Tbsp
    each- garlic powder,onion powder,chili powder,ground cumin,
  • 1 Tbsp
    white pepper,cayenne pepper,ground black pepper,ground rosemary,ground thyme
  • 4 Tbsp
    paprika,mix everything together and store in a plastic baggie or tupperware.

    If you have a removable insert for your slow cooker that can be used on the stove top then that's great but if it's a porcelain insert than you'll have to start with a fry pan.

    Begin by browning the onion,garlic in the olive oil then add the carrots and celery,spices and herbs,saute for 2-3 minutes,move to the slow cooker. In the same pan add the seasoned pork chops to the pan and brown them slightly,3 minutes per side and move to the slow cooker,nestle the into the vegetables.

    Pour the stock and wine around the chops so as not to wash off the dry rub. Set your slow cooker to 3.5 hours on low.

    When the chops are finished cooking,carefully remove to a platter and spoon the vegetables all over the chops,cover with foil. Bring your liquid from the pork chops up to a boil and thicken with a roux until you have a nice smooth gravy. Pour gravy all over the chops and serve with some nice mashed or boiled potatoes and some extra gravy,don't forget the bread and butter!! Enjoy! :)
