The mix of spices for the rub is very simple. The flavor they bring out and the simplicity of this recipe are why I use it over and over. Once the meat is cooked, you can use it for pulled pork or just have it as it is for delicious dinner meat. I like to let the pork loin sit in the rub for a day. But if you only have a few hours, it's still great!

If you need a super easy dinner, try this pork loin. Let the seasoning set overnight, throw the pork loin in the Crock Pot with a few fresh ingredients, and prep is done. Once it cooks, the pork is super tender. The meat has a Tex-Mex feel thanks to the chili powder and cumin. The perfect recipe for a busy day.

Ingredients For seasoned pork loin

  • 1-2 lb
    pork loin, lean
  • 1 tsp
    Kosher salt
  • 1/2 tsp
    black pepper, ground
  • 1 tsp
    chili powder
  • 1 tsp
    cumin, ground
  • 1 tsp
    garlic powder
  • 1 stalk
    celery, chopped
  • 1 c
    carrots, chopped
  • 1/2
    onion, chopped
  • 1/4 c
    water

We had two small strips of pork loin that were about 1 lb each. After sliced, we poured the natural juices over the pork loin for additional flavor.
  • Spices added to a bowl.

    In a gallon Ziploc bag, mix the dry spices up well.
  • Pork and seasonings in a resealable bag.

    Add the pork loin and make sure it's covered in the spices. Seal the bag and place it in the refrigerator for 3-24 hours. The longer it sits the better it will taste.
  • Carrots, celery, onion, and water added to slow cooker.

    Before adding the ingredients, line your Crock Pot with a cooking liner (I get these at Target) or grease it. In the Crock Pot, add the carrots, celery, onion, and water.
  • Pork loin placed on top of the vegetables.

    Remove the pork loin from the Ziploc bag. Discard the bag and remaining spices. Place the pork loin over the vegetables in the Crock Pot. Cook on medium heat 6 hours, or longer if you have the time.
  • Slicing pork loin into slices.

    Once the meat is done, you can shred it for sandwiches or slice it into loin medallions.
