The mix of spices for the rub are very simple. The flavor they bring out and the simplicity of this recipe is why I use it over and over. Once the meat is cooked you can use it for pulled pork or just have it as it is for a delicious dinner meat. I like to let the pork loin sit in the rub for a day, but if you only have a few hours, it's still great!

Slow Cooker Crock Pot


  • 1-2 lb
    pork loin, lean
  • 1 tsp
    kosher salt
  • 1/2 tsp
    black pepper, ground
  • 1 tsp
    chili powder
  • 1 tsp
    cumin, ground
  • 1 tsp
    garlic powder
  • 1 stalk(s)
    celery, chopped
  • 1 c
    carrots, chopped
  • 1/2
    onion, chopped
  • 1/4 c

How to Make Seasoned Pork Loin


  1. In a gallon Ziploc bag, mix the dry spices up well. Add the pork loin and make sure it's covered in the spices. Seal the bag and place in refrigerator for 3-24 hours. The longer it sits the better it will taste.
  2. Before adding the ingredients, line your crockpot with a cooking liner (I get these at Target) or grease it. In the crockpot, add the carrots, celery, onion and water. Remove the pork loin from the Ziploc bag and discard the bag and remaining spices. Place the pork loin over the vegetables in the crock pot.
  3. Cook on medium heat 6 hours, or longer if you have the time. Once the meat is done, you can shred it for sandwiches or slice into loin medallions.
