1 Tbspgrated orange rind

3/4 corange juice

1 Tbspcornstarch

1 Tbspsoy sauce

1/3 ccorn syrup

1/4 tspground ginger

2 tspvegetable oil, divided

2 lgcarrots, peeled and sliced diagonally

2 stalkcelery, peeled and sliced diagonally

1/2 ccashews

hot cooked rice, if desired
How To Make orange stir fry

1Cut pork tenderloin into thin strips. Set aside. Combine orange rind, orange juice, cornstarch, soy sauce, corn syrup and ginger, stirring well.

2Heat one teaspoon oil in nonstick skillet over medium heat. Add carrots and celery, stir frying about 3 minutes. Remove vegetables, set aside.

3Pour remaining oil into skillet. Add pork, stir fry for about 3 minutes. Return vegetables to pan, add orange juice mixture and cashews. Cook, stirring constantly, over medium-high heat, until thickened. Serve over hot rice, if desired.
