When I saw Carol Perricone's recipe for Homemade Vodka Sauce, this idea for an Italian meatloaf popped into my mind. I've used my basic meatloaf recipe, with Italian-inspired ingredients. Your dinner guests will want plenty of sauce, so whatever doesn't fit onto the meatloaf platter you can put in a gravy boat and pass with a large ladle!

Ingredients For meatloaf with vodka sauce

  • 1 1/2 lb
    lean ground beef
  • 1/2 lb
    ground pork
  • 1/2 c
    grated parmesan cheese
  • 1 Tbsp
    dried basil
  • 6 oz
    tomato paste
  • 1/4 c
    heavy cream
  • 2
    eggs, beaten
  • 1 tsp
    each salt and pepper
  • 1 1/2 c
    fresh breadcrumbs

How To Make meatloaf with vodka sauce

    Prepare the https://www.justapinch.com/recipes/main-course/main-course-pasta/homemade-vodka-sauce.html. Keep warm. Make breadcrumbs by buzzing about 3 slices of Italian bread (or your choice) in a food processor or blender. Set aside.

    Have all ingredients at room temperature. In a large mixing bowl, combine ground meats, parmesan cheese, basil, tomato paste, cream, eggs, and salt & pepper. Gently fold in breadcrumbs. Mix until uniform.

    Turn mixture into a greased tube pan or Bundt pan. Bake at 350°F for 1 hour. Allow to cool in pan 10 minutes, then turn out on a serving platter with a high rim (to catch the vodka sauce). Pour the hot vodka sauce over the meatloaf, filling up the middle of the meatloaf.
