Low Fat Maple Syrup & Apple Braised Pork

This is an excellent dish for some pork tenderloins. The maple syrup and apple juice, combined with the lemon juice adds several layers of really intense flavor to the dish.
Pair this up with some good mash potatoes, and you’ve got a simple dish to prepare

  • 4
    boneless pork tenderloins, about 4 ounces each
  • 2 Tbsp
    dijon mustard
  • 1/2 Tbsp
    olive oil, extra virgin
  • 1 c
    apple juice
  • 1/3 c
    maple syrup, the real stuff
  • 1 Tbsp
    lemon juice, freshly squeezed
  • 1 pinch
    cayenne pepper
  • 1 medium
    tart green apple

How to Make Low Fat Maple Syrup & Apple Braised Pork


  1. Add the apple juice, maple syrup, lemon juice, and cayenne pepper in a small bowl, and whisk to combine.
  2. Coat the tenderloins with the dijon mustard.
  3. Sauté them in a skillet over high heat, about 2 minutes on each side.
  4. Chef’s Note: The tenderloins should be nicely brown and crisp, but not black.
  5. Add the apple juice/maple syrup/lemon juice and cayenne mixture to the pan.
  6. Reduce heat to low, cover and allow the tenderloins to simmer for 25 to 30 minutes.
  7. While the tenderloins are simmering, peel the apple, cut into quarters, and thinly slice.
  8. Every five minutes, uncover and spoon some of the sauce over the tenderloins.
  9. Add the sliced apple in the last 10 minutes of cooking.
  10. Remove from pan, and slice the pork.
  11. Lay on a bed of mash potatoes, ladle some of the sauce and apples on top, and serve warm.

  12. Keep the faith, and keep cooking.
