This is a great little meal that I love to cook and my hubby loves to eat. This is a typical Louisiana-style recipe that you cook in a slow cooker.

What a tasty and easy pork chop recipe. Smoky sausage alongside the veggies really gives this dish a great flavor. For flavor, make sure to use a good smoked sausage, similar to andouille. The pork chops are tender and melt-in-your-mouth good. Serve over rice with a couple of shakes of hot sauce and green onion for a real Louisiana-style dinner.

  • 4 oz
    smoked sausage, chopped
  • 3 Tbsp
    all-purpose flour
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 4
    bone-in center-cut pork chops, 1 1/4-inch thick
  • 3 Tbsp
    vegetable oil
  • 1 pkg
    gumbo frozen vegetable mix (onion, celery, and bell pepper, 16 oz)
  • 14 oz
    chicken broth
  • 1/2 tsp
    dried thyme
  • 1 Tbsp
    corn starch
  • 2 Tbsp
    water
  • hot cooked rice
  • 4
    green onions, sliced
  • hot sauce, optional

How To Make louisiana-style smothered pork chops

  • Sausage sauteeing in a skillet.

    Saute the sausage in a large skillet over medium-high heat until browned.
  • Sauteed sausage on a paper towel to drain.

    Remove the sausage to paper towels to drain. Reserve the drippings in the pan.
  • Pork chops in a bag with flour, salt, and pepper.

    Combine the flour, salt, and pepper in a large zip-top bag; add the pork chops. Seal the bag and shake to coat.
  • Adding oil to the skillet.

    Add the oil to the drippings in the skillet.
  • Browning the pork chops.

    Cook the pork chops in the oil over medium-high heat for 3 minutes on each side, or until browned.
  • Pork chops in a slow cooker.

    Transfer the chops to a 5 or 6-quart slow cooker.
  • Sausage and veggies layered over pork chops.

    Layer the vegetable mix and sausage over the pork.
