I had a bag of frozen Tortellini that kept falling out at me, every time I opened my freezer door...so, I decided to finally do something with it, and this is what I came up with...the family loves it's creaminess from the eggs and heavy cream...not for the weight cautious folks...that includes me...I tasted a tortellini just to make sure it was post worthy...lol! It was definitely that and more...enjoy!

Ingredients For cass's delicious cheese tortellini alfredo

  • 1 - 19 oz
    package, frozen tortellini - i used rosetto / cooked per package directions
  • 8 slice
    thick bacon , cooked and broke into pieces - reserve about 2 tablespoons grease
  • 2 Tbsp
    bacon grease
  • 3 large clove
    garlic, minced
  • 1
    sweet onion, chopped
  • 2 c
    heavy cream
  • 2 1/4 Tbsp
    ap flour
  • 2 tsp
    salt - sounds like a lot, but will need it
  • 1 tsp
    pepper
  • 3
    eggs, beaten
  • 1/2 c
    shredded, parmesan cheese
  • 3
    green onions chopped tops and all
  • 1 Tbsp
    parsley flakes

How To Make cass's delicious cheese tortellini alfredo

    Have your pasta cooking at the same time you are making your sauce, so it's not cold when you go to add to the cream sauce.

    Cook your bacon, drain.

    In a large skillet, I use my wok - saute onions in 2 tablespoons of the bacon grease reserved, until translucent, add the garlic and continue cooking for about 1 more minute.

    In a small bowl, whisk the cream with the flour, making sure there are no lumps. Whisk in the pepper and salt.

    In a small bowl whisk the eggs. Set aside.

    When onions and garlic are finished sauteing; Add the cream mixture. Bring to a slow boil and cook just until thickened, about 1 minute.

    Stir a small amount of hot cream into the eggs, to temper... return the egg mixture to the pan and stir constantly. Bring to a slow boil, cook and stir a couple more minutes.

    Drain pasta.

    Add the parsley, 3/4 of bacon, 3/4 of green onions, Parmesan cheese and drained tortellini.

    Heat through and serve immediately. I top each serving with the left over bacon, green onions and a sprinkle of Parmesan. Notes: This sauce could be used with any pasta. Enjoy!
