sausage & kale with pasta

My Ukrainian grandmother taught me how to cook.. but never measured anything. I still cook the same way today, 50 years later, even when putting together something from the other side of my ancestry. So a lot of my measurements say "a splash of this" or "a handful of that" or "about a cup" in my notes..I've tried to assign them measured amounts here. Anyway.. Here's a nice Italian comfort-type food, good on a cold night, or any time.

Ingredients For sausage & kale with pasta

  • 1 lb
    italian pork sausage, in bulk or casings removed and crumbled (i like this with hot sausage)
  • 1/2 lb
    fresh kale, chopped
  • 1/2 lb
    pasta of choice, cooked
  • 3/4 c
    chicken stock or broth
  • 1/4 to 1/2 c
    grated hard cheese (parmesan, romano, etc)
  • OPTIONAL:
  • 2 clove
    minced garlic
  • splash of white wine
  • 1 Tbsp
    olive oil

How To Make sausage & kale with pasta

    Brown the crumbled sausage in a bit of olive oil(if desired), in a good sized saute pan. Add garlic if using, and the chopped kale, then saute until the kale is tender, stirring often.

    Add wine here to de-glaze pan if using, then add chicken stock and pasta, stirring to combine. add about 1/4 to 1/2 cup of grated cheese, stir until the cheese and broth and fats combine to make a kind of coating(you can add more broth if you want it more saucy -I usually find that it's coated well enough already)

    Toss it on a plate, top with some extra grated cheese and then mangia! Good hearty italian style comfort food on a cold winter's night :)
