The sweet baked onions go with the red curry very well. Taste and add more spiciness if you like.

Ingredients For red thai curry with smoked sausage and baked onion

  • 1 pkg
    smoked sausage, sliced
  • 1/2
    orange bell pepper, thinly sliced
  • 1/2
    yellow bell pepper, thinly sliced
  • 1 Tbsp
    tomato paste
  • 2 clove
    garlic, minced
  • 1 can
    green chilies
  • 1 tsp
    ginger
  • 1 Tbsp
    red curry paste, thia
  • 1/2 c
    red wine
  • 1/2 c
    water
  • 2 Tbsp
    greek plain yogurt
  • 2 md
    sweet onions
  • olive oil

How To Make red thai curry with smoked sausage and baked onion

    Preheat oven 400 F. Peel onions thoroughly, slice the top and bottom of onions. Then slice them in half along the equator. Sprinkle olive oil in a baking dish. Place onions with the wide part facing up. Sprinkle olive oil on top. cover with foil. Bake for 20 minutes. Remove foil and cook 20 minutes more until onions are soft and slightly caramelized.

    In the last 10 minutes of cooking. Heat a medium pan over med-high heat. Add bell peppers and sausage and cook until sausage is brown and peppers are soft.

    Add tomato paste, garlic, ginger, and green chilies. Cook for a minute. Raise heat and stir in wine. Stir and add water.Lower heat and Cook together for five minutes. Remove from heat and stir in Greek yogurt. Serve over rice and with baked onion.
