nana's grits & eggs

Any kind of seasoning can be substituted for old bay seasoning: Italian, onion powder, cinnamon. This dish is good enough to convert my husband (a Mid-Westerner) to loving grits. I usually fix this as a complete supper for the 2 of us.

Ingredients For nana's grits & eggs

  • 2 c
    water
  • 3/4 c
    quick cooking grits
  • 2 Tbsp
    butter
  • dash
    salt
  • 2 lg
    eggs
  • 1/4 c
    shredded cheddar cheese
  • 1/4 c
    shredded parmesan cheese
  • 1/4 c
    shredded mozzarella cheese
  • 1/2 - 1 tsp
    old bay seasoning

How To Make nana's grits & eggs

  • Step 1 Butter & seasonings in water

    Start stove at high. Put 2 c water in 2-qt saucepan. Add 2 tbsp butter, salt & old bay seasoning. Bring to a boil
  • Step 2 Grits & water boiling

    Using a whisk, slowly pour 3/4 c quick-cooking grits and whisk until thoroughly mixed. Bring back to a boil.
  • Step 3 Reduced temp before adding eggs

    Reduce heat to low-medium and continue whisking until grits begin to thicken. Whisk in eggs and mix thoroughly.
  • Step 3 & 4 Eggs & cheese(s)

    Reduce heat to low and add cheeses. Whisk in until well blended. Serve immediately.
  • This is the finished product. Hope you enjoy them.

    If grits thicken too much, add a little milk and whisk until well blended.
