This is a simple yet delicious Creole dish which my Grandmother made frequently.

6 large
fresh tomatoes
3 large
sweet onions
1/2 tsp
3 large
green peppers
1/2 c
olive oil
1/4 tsp
sweet basil

How to Make Creole Dish


  • 1Slice onions and cook in oil until golden brown.

    Wash squash, but do not peep unless a bit tough.

    Cut squash into 1/2 inch slices, arrange in layers with peppers, onions, oregano, and tomatoes, arrange sprigs of basil on the tomatoes.
  • 2Bake slowly for about 30 minutes.
