I like to serve this with a flour tortilla, sliced avocado and Mexi-mix cheese on top. Very good eating.

Ingredients For black beans and rice

  • 1/8 c
    olive oil
  • 1
    onion, finely chopped
  • 1
    green bell peppers, chopped
  • 1 1/2
    garlic cloves, chopped
  • 2
    bay leaves
  • 1/2 Tbsp
    ground cumin
  • 1 c
    long-grain white rice
  • 1
    (14 ounce) cans black beans, drained and rinsed
  • 1
    (14 ounce) cans diced tomatoes and green chilies, drained
  • 1 c
    water
  • 1/8 c
    apple cider vinegar
  • kosher salt & freshly ground black pepper, to taste

How To Make black beans and rice

    Saute the onions, green bell peppers, garlic, bay leaves, and cumin in the olive oil over medium heat, until the veggies are tender, but still crisp.

    Add rice, black beans, tomatoes, water, vinegar, salt, and pepper. Mix well and bring to a boil.

    Once boiling, switch to low and cover.

    Cook for about 40 minutes, or until rice is ready.
