The first time I served this to my husband I could see in his face he was thinking "I don't think I'm gonna like this" but once he tasted it he loved it. It is a staple at our house now. Low calorie and fat and good for you.

Ingredients For fish in crazy water with fennel

  • 1/2 c
    diced carrot
  • 1/2 c
    diced fennel bulb
  • 2 clove
    garlic minced
  • 2 Tbsp
    olive oil
  • 1 can
    14.5 oz. crushed tomatoes
  • 1 c
    water
  • 1/2 c
    dry white wine
  • 1/4 c
    dices kalamata olives
  • 2 Tbsp
    capers
  • zest of 1 lemon
  • 1 Tbsp
    lemon juice
  • 1/2 tsp
    salt
  • 1/2 tsp
    red pepper flakes
  • 4 md
    cod fillets skin removed. can use red snapper, or any firm white fish of your choice

How To Make fish in crazy water with fennel

  • 1
    Cook carrot, fennel, and garlic in oil in saute pan over medium heat until browned about 5 minutes.

    Add tomatoes, water, wine, olives, capers, zest,lemon juice, salt, and red pepper flakes. Bring to a boil and reduce to a simmer and simmer until reduced by half about 15 minutes.

    Add Cod and cover pan and poach until done 8 to 10 minutes.
