I have made this dish so many different ways. Some times I call it a Stir Fry. I have used chicken, beef, pork & even shrimp. But the vegetables are mostly the same each time. Am always trying new ways to get my family to eat more vegetables. This is another family favorite

Ingredients For one skillet chicken & vegetables

  • extra virgin olive oil
  • 1 md
    onion, julienned
  • 4 md
    carrots, sliced diagonal
  • 1 md
    new red potatoe, 1/2 slices
  • 4 clove
    button mushroom, halved
  • 1 lb
    broccoli crowns, bite size
  • 3 clove
    garlic, sliced
  • 3
    chicken thighs, boneless skinless & cut into strips
  • 1 Tbsp
    fresh herbs, basil, oregano & thyme chopped
  • 3/4 c
    chicken broth
  • 1/2 tsp
    salt & pepper mix

How To Make one skillet chicken & vegetables

    heat large skillet over medium heat & add in a drizzle of EVOO. Saute the onion until almost translucent. The add in the carrots & potato. Stir occasionally until potatoes start to turn brown.

    Add in the mushrooms broccoli & garlic. Cook until broccoli is just turning color & still is crisp. Remove vegetables from pan & set aside.

    Add the chicken to the pan & cook until brown. Pour in the chicken broth & simmer until chicken is fully cooked. Stir in the veggies.

    Add in the herbs & seasonings. taste to check & adjust the taste as needed.
