    onion, sliced
  • 1 Tbsp
    olive oil
  • 1 can
    (16 oz) red kidney beans, drained
  • 1 can
    (14.5 oz) diced tomatoes, undrained
  • 2 tsp
    cajun seasoning
  • 1
    cooked rotisserie chicken, skin and debone, cut chicken into bite size pieces

    cooked rice

    In a large skillet saute onion in oil for 3 minutes until tender. Add beans, tomatoes and seasoning; bring to a boil. Reduce heat; add chicken.

    Cover and simmer 8 to 10 minutes or until chicken is heated through. Serve chicken and beans over hot rice.
