Baked potatoes are such a blank canvas for all kinds of toppings. Some like them simple with only butter and sour cream. Others, like me, load them up with bacon, broccoli, cheese and chicken.

  • 4 large
    russet potatoes, cubed
  • 2 c
    chopped broccoli
  • 3 Tbsp
    olive oil
  • 4 large
    chicken breasts, cubed
  • 1 c
    bacon, crumbled
  • 1 1/2 c
    shredded cheddar cheese
  • 4
    chopped scallion (roughly 1 green onion - both green and white parts)
  • 3 Tbsp
    butter, sliced
  • ·
    salt & pepper, to taste

How to Make Loaded Baked Potato Casserole


  1. Preheat oven to 350 degrees
  2. Have a large casserole dish or an9 x 13 pan ready.
  3. In a large bowl, toss together the potatoes, broccoli, olive oil, raw chicken and 1/2 teaspoon salt.
  4. Stir in the bacon and 3/4 cup cheese.
  5. Lay butter slices over casserole. Season with another 1/2 teaspoon salt & 1/2 teaspoon pepper.
  6. Spoon the potato mixture into the casserole dish.
  7. Cover with foil and bake 60 minutes.
  8. Uncover sprinkle with the remaining 3/4 cup of cheese and bake for another 15 minutes or until the potatoes are soft.
  9. Remove from the oven and sprinkle green onions on top. Serve hot.
