Baked potatoes are such a blank canvas for all kinds of toppings. Some like them simple with only butter and sour cream. Others, like me, load them up with bacon, broccoli, cheese and chicken.

4 large
russet potatoes, cubed
2 c
chopped broccoli
3 Tbsp
olive oil
4 large
chicken breasts, cubed
1 c
bacon, crumbled
1 1/2 c
shredded cheddar cheese
chopped scallion (roughly 1 green onion - both green and white parts)
3 Tbsp
butter, sliced
salt & pepper, to taste

How to Make Loaded Baked Potato Casserole


  • 1Preheat oven to 350 degrees
  • 2Have a large casserole dish or an9 x 13 pan ready.
  • 3In a large bowl, toss together the potatoes, broccoli, olive oil, raw chicken and 1/2 teaspoon salt.
  • 4Stir in the bacon and 3/4 cup cheese.
  • 5Lay butter slices over casserole. Season with another 1/2 teaspoon salt & 1/2 teaspoon pepper.
  • 6Spoon the potato mixture into the casserole dish.
  • 7Cover with foil and bake 60 minutes.
  • 8Uncover sprinkle with the remaining 3/4 cup of cheese and bake for another 15 minutes or until the potatoes are soft.
  • 9Remove from the oven and sprinkle green onions on top. Serve hot.
