We made this last night and everyone at the table enjoyed it. It is easy to prepare and took less than 30 minutes. After doing the quick math, we fed a family of four for less than $10. Hard to beat these days for a great tasting meal.

Ingredients For cajun chicken with chile cream sauce

  • 4
    boneless skinless chicken breasts
  • 2 tsp
    cajun seasoning
  • 1 Tbsp
    olive oil
  • 1 can
    (10.75 oz.) cream of chicken soup
  • 1/2 c
    water
  • 1 can
    (4 oz.) green chiles
  • 1 tsp
    lime juice
  • 1/4 c
    nonfat sour cream
  • hot cooked yellow rice
  • lime zest

How To Make cajun chicken with chile cream sauce

    Season chicken with cajun seasoning. Heat oil in skillet over medium heat. Add chicken and cook for 8 to 10 minutes until browned turning once.

    Meanwhile combine soup, water, chiles and lime juice in a medium saucepan and warm over medium heat. Stir in sour cream and continue to heat through.

    Place chicken breasts over hot rice and drizzle with chile cream sauce. Sprinkle with lime zest. Serve with additional sauce.
