Because I hate to go to the supermarket and because Bubba wants a home cooked meal, there are times when I have to make due with whatever is in the pantry. This is one of those make due recipes.

sliced celery

chopped onion

chopped green bell pepper

garlic, minced
3/4 c
tomato paste
3/4 c

baking powder

How to Make Hungry Boy's Casserole


  • 1Preheat oven to 375 degrees.
  • 2Sauté ground buffalo, celery, onion, bell pepper, and garlic in a large cast iron skillet. Drain.
  • 3Add tomato paste, water, salt, and paprika. Reserve 1 cup for biscuits. Add pork and beans. Simmer while preparing biscuits.
  • 4Sift flour, salt, and baking powder into a large bowl.
  • 5Cut in butter. Add milk. Stir until dough clings together.
  • 6Knead on floured board 12 times. Roll out to 12x9-inch rectangle.
  • 7Place 1 cup reserved meat mixture on dough. Roll up, starting with the 12 inch side. Seal edge.
  • 8Cut into 1 inch pieces. Turn meat mixture into a 9x13 inch baking pan. Top with biscuits. Bake until hot and biscuits are golden brown, about 10 to 12 minutes.
