Because I hate to go to the supermarket and because Bubba wants a home cooked meal, there are times when I have to make due with whatever is in the pantry. This is one of those make due recipes.

Ingredients For hungry boy's casserole

  • 1 1/2 lb
    ground buffalo
  • 1 c
    sliced celery
  • 1/2 c
    chopped onion
  • 1/2 c
    chopped green bell pepper
  • 1 clove
    garlic, minced
  • 3/4 c
    tomato paste
  • 3/4 c
    water
  • 1 tsp
    salt
  • 1 tsp
    paprika
  • 1 can
    pork and beans
  • 1 1/2 c
    flour
  • 1/2 tsp
    salt
  • 2 Tbsp
    baking powder
  • 1/4 c
    butter
  • 1/2 c
    milk

How To Make hungry boy's casserole

    Preheat oven to 375 degrees.

    Sauté ground buffalo, celery, onion, bell pepper, and garlic in a large cast iron skillet. Drain.

    Add tomato paste, water, salt, and paprika. Reserve 1 cup for biscuits. Add pork and beans. Simmer while preparing biscuits.

    Sift flour, salt, and baking powder into a large bowl.

    Cut in butter. Add milk. Stir until dough clings together.

    Knead on floured board 12 times. Roll out to 12x9-inch rectangle.

    Place 1 cup reserved meat mixture on dough. Roll up, starting with the 12 inch side. Seal edge.

    Cut into 1 inch pieces. Turn meat mixture into a 9x13 inch baking pan. Top with biscuits. Bake until hot and biscuits are golden brown, about 10 to 12 minutes.
