enchilada casserole

I make this with red or green enchilada sauce. My kids and husband love it. I was looking for an easy week night meal, and I rarely buy pre-cooked chicken, but I did, and this is a great, easy weeknight meal. I didn't think I liked the green enchilada sauce either, but once I tried it, I really liked it. Experiment when cooking! Happy Cooking!

    rotisserie chicken
  • 12
    flour tortillas
  • 1 can
    red enchilada sauce
  • 1 can
    green enchilada sauce
  • 2 c
    cheddar cheese
  • 2 c
    mozzarella cheese

How To Make enchilada casserole

    Spray 2 9x13 pans with cooking spray. Remove chicken from the bone, and tear into small pieces. Lay 2 tortillas in the bottom, and tear 1 in half, and fit into pan to cover bottom. Lay 1/4 of chicken in pan, pour 1 can of sauce over chicken, then 1 cup of cheese over that. Then another layer of tortillas, chicken, sauce, and cheese. Then prepare your second pan the same way. Bake on 350 degree for 30 minutes or until the cheese is melted and starting to brown. Most of my kids like the red sauce, but my husband, myself, and a couple of kids like the green sauce. Try both, then decide which one you like for the next time you make this delicious casserole. Enjoy!
