Having a large family, I've learned to make larger meals. This is a large meatloaf that you can either cut the recipe in half or freeze some for a quick microwave meal later.

Ingredients For meat loaf

  • 1 lb
    ground beef or chuck 93% lean
  • 1 lb
    ground turkey
  • 2
    eggs
  • 1 sm
    oinion chopped
  • 3-4 pinch
    parsley (fresh is best but dried is ok)
  • 1/4 c
    chopped celery
  • 3-4 slice
    dried bread or equal amount in dried bread crumbs
  • 1 can
    12 oz tomato sauce
  • 2-3 dash
    salt
  • 3-4 dash
    ground black pepper

How To Make meat loaf

    Mix all ingredients by hand in large bowl until well blended.

    Put in casserole dish with lid and form with hands to flatten top and move loaf away from sides of dish.

    Bake at 425 degrees F 45 minutes, remove lid and bake another 15 minutes or so until top browns nicely.

    I serve with some kind of potatoes, mashed or boiled and a vegetable. I usually serve a green veggie, leafy or otherwise. Squirting a bit of ketchup on top of the meatloaf adds more zing to it if you so choose.
