My late father used to make this all the time when we were growing up. It's so refreshing in the summer time when it's too hot out. I had been craving it this past couple of months and decided to make it, my husband had it for the first time today and he's hooked! This is an Irish Potato Salad. It's amazing the next day after all the spices and meat mix and set, Best served the next day in my opinion. Hope you give this salad a chance, you wont regret it. Enjoy!

Ingredients For dad's spirited potato salad

  • 2 Tbsp
    vinegar
  • 1 tsp
    celery seed
  • 1 tsp
    mustard seed
  • 3 md
    potatoes,boiled , peeled and cubed
  • 2 tsp
    sugar
  • 1/2 tsp
    salt
  • 2 c
    of red or green cabbage(i use one cup of each)finely shredded
  • 1 can
    12 oz of corned beef (cubed)
  • 1/4 c
    finely diced dill pickle
  • 1 c
    miracle whip ( or mayo)
  • 1/4 c
    milk (of your choice)
  • 1/2 tsp
    salt

How To Make dad's spirited potato salad

    Place Corned Beef in the fridge, for at least 3+ hours before serving.

    Combine vinegar, celery seed and mustard seed and set aside. Cook Potatoes in a salted water bath. for 30-40 mins, till they are just barely down, drain water, peel and cube up while they are still hot. Drizzle with vinegar mixture. Sprinkle sugar and 1/2 tsp. salt and chill thoroughly.(about 3-4 hours

    Shred cabbage with grater or food processor.

    (Cube Corned Beef) Before serving, add cabbage, pickles, corned beef and onion. Mix together Mayo, milk and 1/2 tsp. salt. Pour over potatoes, Toss LIGHTLY.
