I usually make corned beef hash with canned corned beef. This time, I thought I would try out making it with an actual roast and not the canned stuff. It turned out wonderful! It is a lot more time consuming, but worth the time to make it.

We loved this rustic corned beef hash recipe. It has crispy potatoes, deliciously seasoned corned beef and caramelized onions. Everything cooks together until the flavors marry beautifully. It's a savory dish that's made even better with a fried egg on top. Delicious comfort food! If you have leftover corned beef from St. Patrick's Day you can use that.

Ingredients For corned beef hash

  • 2 lb
    corned beef
  • 2 1/2 lb
    red skin potatoes
  • 2 md
    onions
  • 1/2 stick
    salted butter
  • salt
  • pepper

How To Make corned beef hash

  • Corned beef in a baking dish.

    Place corned beef roast in aluminum foil wrapped baking dish.
  • Adding seasoning to the corned beef.

    Add the packet of seasoning provided in the roast packaging to the corned beef.
  • Ready to bake the corned beef in the oven.

    Slow cook in the oven at 300 degrees for 4 hours.
  • Letting the baked corned beef cool.

    Set aside to cool.
  • Cutting the corned beef into pieces.

    Once the corned beef is cooled, chop the corned beef roast into medium-fine pieces.
  • Potatoes cut into cubes.

    Cut potatoes into cubes.
  • Par-boiling the potatoes.

    Parboil until slightly tender.
  • Potatoes and butter in a skillet.

    Place potatoes in a large skillet with butter on med-high heat.
  • Adding onions to the potatoes.

    When potatoes begin to brown, add chopped onion.
  • Corned beef added to the skillet.

    Onions will begin to caramelize. Add the chopped corned beef. Salt and pepper to taste. Serve hot.

    You may poach or fry an egg to serve on top. Some like hash pan fried crispy which is also quite tasty!
