You can also put this in the Crock Pot for about 12 or so hours. Add onion when you have four hours to go. Add carrots when you have 2 hours to go. Add cabbage when you have an hour to go. You could add cubed potatoes, but my family likes to mix their cabbage with mashed potatoes, so I serve this with the mashed potatoes and biscuits.

    corned beef brisket (4 lb.)

    small onions

    3 carrots, peeled and chopped

    medium cabbage
  • fresh ground pepper, to taste

If you want to cook potatoes with the corned beef, slice small red potatoes in half (a two-pound bag). Add them to the pot with the cabbage, letting them cook underneath. When the cabbage is done, so are the potatoes.

    Place corned beef in a large pot.
  • Water added to the pot to cover the corned beef.

    Cover with cold water. Simmer for 2 1/2 hours, skimming fat off liquid when necessary.
