With St. Patrick's Day not too far away now I start looking thru my Irish recipes . This little gem comes from the Appletree Press title: "A Little Irish Cookbook." I have made this recipe with a few changes of my own. My husband and I love Irish stew. It is a quick and easy recipe to prepare. I hope you will give this one a try.

Ingredients For beef in guinness irish stew

  • 2+1/2 lb. stewing beef chunks
  • 2 large onions sliced
  • 6 medium carrots sliced
  • 2 tbsp of seasoned flour
  • a little fat or beef dripping
  • 1/2 cup dry cider
  • 1 cup guinness with water
  • (i add the whole can of guinness and one cup of water)
  • sprig of parsley
  • boiled potatoes quartered

How To Make beef in guinness irish stew

  • 1
    Cut beef into chunks , and peel and slice the onions and carrots
  • 2
    Toss the beef in flour and brown quickly in hot fat
  • 3
    Remove beef and fry the onions gently until transparent
  • 4
    Return the beef and add the carrots and the liquid. Bring just to a boil , reduce heat to a very gentle simmer, cover closely
  • 5
    Cook for 1+1/2 -2 hours. Check the dish so that it doesn't dry out, adding more liquid if necessary

    Sprinkle with chopped parsley and serve with boiled potatoes

    (I cook the potatoes right in with the beef, carrots and onions. I also add a clove or two of garlic.)
