Ingredients For ratatouille with sauce

  • 3 clove
    garlic, finley grated
  • 1/2 c
    onions, chopped
  • 3 Tbsp
    olive oil
  • 1 c
    green bell peppers, diced
  • 2 1/2 lb
    eggplant,unpelled and diced
  • 2 1/2 lb
    zucchini,sliced 1/4 inch
  • 1 can
    28 oz crushed tomatoes,undrained
  • 1 1/2 tsp
    basil, dried
  • 1 1/2 tsp
    italian seasoning
  • 1 1/2 tsp
    salt
  • 1 lb
    mushrooms whole
  • 1 1/2 lb
    italian sausage (your choice sweet or hot)
  • 8 oz
    swiss cheese,grated
  • black pepper, to taste

How To Make ratatouille with sauce

  • 1
    Saute garlic and onions in oil until soft.

    Add green pepper,eggplant,zucchini;cook5 minutes over medium heat,tossing well.

    Add undrained tomatoes and seasonings. Simmer 15 minutes;cover and simmer 15 more minutes.

    Add mushrooms to vegetables during last 10 minutes of cooking time. Meanwhile, cook Italian sausage in skillet until done and drain well. (I like it in Crumbles some like it in slices. if in links I cut into slices after cooked.)

    Add sausage to vegetables; sprinkle with grated cheese. cover and simmer until cheese melts. Serve
