This is an original take on an family recipe. Very Simple and can be a main entre' or an appetizer or grilled vegetables.

Ingredients For tuna potato patties

  • 2 lg
    potatoes-diced in small chunks
  • 1 sm
    onion-smal diced
  • 2 can
    albacore tuna
  • 1-1/2 tsp
    garllic parsley salt
  • 2 lg
    eggs
  • cornmeal or polenta

How To Make tuna potato patties

    In a large Pot, boil potatoes for 15 minutes. Drain off liquid. Cool slightly, then mash adding in salt to taste. Set aside .

    Drain cans of Tuna. Add to mashed potatoes. Add in eggs. Stir to combined. sprinkle Garlic parsley salt. Stir again. Cover and refrigerate for 30 min.

    Using a small cookie scoop, portion into a ball, slightly pressing into a thick disk.

    Dip both sides in cornmeal. Set disks on clean plate. Heat 2 T. in a non-stick skillet on med. Do not move meat until slightly browned on one side. Flip and check often for firmness. Place on serving plate.

    Serve with salad or fruit salad.
