shrimp sausage pasta with hollandaise sauce

Just made a good hollandaise sauce and thought what, besides eggs, would this go good with… This is a pasta recipe with shrimp and sausage that totally rocks. I wouldn’t recommend eating this every day… unless you have a death wish :-) With that said, it is a great dish with awesome flavors. So, you ready… Let’s get into the kitchen.

Ingredients For shrimp sausage pasta with hollandaise sauce

  • 6 lg
    shrimp, jumbo variety, about 4 ounces
  • 4 oz
    chorizo, mild or hot, your choice
  • 4 oz
    dry fettuccini pasta
  • 1/2 tsp
    olive oil
  • 3 Tbsp
    lemon juice, freshly squeezed
  • 1 Tbsp
    capers, with juice
  • dry wine, just a splash for deglazing
  • kosher salt, to taste
  • black pepper, freshly ground, to taste
  • 1/4 c
    hollandaise sauce, more on that later

How To Make shrimp sausage pasta with hollandaise sauce

    Gather your ingredients.

    Cook the pasta according to the package directions.

    Drain the pasta and reserve.
  • 4
    Add the olive oil to a sauté pan over medium heat.
  • 5
    Add the chorizo and allow brown on both sides, about 2-minutes per side.

    Chef's Note: Chorizo can generate a bit of grease. When it's finished cooking make sure that you drain off any excess before continuing.

    Deglaze the pan with a generous splash of the dry white wine.

    Add the shrimp, the capers, and the caper juice to the pan.

    Chef's Tip: Sauté the shrimp until they have lost their pink, and begin to turn opaque, about 2 to 3 minutes.

    Add the remaining lemon juice, and toss with the ingredients.

    Add the pasta to the pan, and toss with the chorizo and shrimp, about 1 minute.

    Add to a large plate.

    Drizzle with the hollandaise sauce, and serve while still warm. Enjoy.
