For more than 30 years I have made this and it has become my signature dish. I have shared it with coutless peoples who love it as much as I do.
Most of the time I do not put in the crab meat as it is pretty expensive. Using just shrimp is wonderful in itself. I suppose you could use crawfish in the place of shrimp.
3/4 cbutter or margarine
1 cfinely chopped onions
1 can(s)cream of celery soup
1 can(s)french onion soup
1 can(s)diced rotel tomatoes & chilies
3 lbcleaned and deveined shrimp
2 cfresh crabmeat, optional
1 1/2 cwhite rice, uncooked
How to Make Seafood Delight
- Preheat oven to 350 degrees.
- Put butter into a large oven proof Dutch oven pot and melt in oven.
- When butter is melted, remove pot from oven and add all remaining ingredients. Stir to mix well.
- Cook until rice is tender, about 1 hour and 15 minutes. Stir every 30 minutes so mixture does not stick.
