Salmon's Date With Pancetta

Pancetta met Salmon 2 years ago at the park while on vacation. They had a wonderful time chatting and laughing. They exchanged phone numbers and email addresses. Salmon was to call Pancetta to set up a date later that month when she would be back in town for a visit. It didn't work out. Hurricane Caper "CAT 5" came through the very next week. Salmon's home and everything else including the information on Pancetta was totally destroyed. Salmon was lost and heart broken. Pancetta was upset as well, because she did not hear from Salmon. She later found out from Weather Channel's Jim Cantore about the hurricane hitting Salmon's area and she was totally devestated. For weeks she tried to locate him through Red Cross. Finally she located him. They were was overjoyed. They met again and the rest is history. They now are married and have lil' Pepper on the way. They lived happily ever after. The end. Ingredients

  • 1 lb
    cured salmon, thinly sliced (nova)
  • 8 slice
    pancetta, cooked
  • 2 slice
    roasted red pepper
  • 1 large
    red onion, caramelized
  • 4 oz
    cream cheese, whipped
  • 2-3 oz
    arugula
  • ·
    zest of one lemon
  • 1 tsp
    crushed red pepper
  • 4
    foccacia bread squares (4x4)

How to Make Salmon's Date With Pancetta

Step-by-Step

  1. in a small mixing bowl, fold capers and lemon zest with cream cheese. mix gently so that you will not break the capers
  2. build your sammie: spread cream cheese mixture on all the halves of the bread. add arugula, pancetta, salmon, peppers, onions and top with bread. enjoy!
