This salmon is great done on the BBQ. But can also be baked in the oven at 375F and cooked until it flakes when tested with a fork.

The instructions and cooking time for this salmon are perfect. The final result is tender and juicy. We loved the flavor grilling adds to the salmon, but this could easily be baked in the oven. On top is a pesto that's sweet and tangy. We opted to use pine nuts for the pesto but walnuts would be great too. You can use this pesto with any fish, chicken, or meat.

Ingredients For salmon fillet with herb pesto

  • 1/2 c
    fresh basil leaves
  • 1/2 c
    fresh parsley
  • 1/2 c
    fresh chives
  • 1 Tbsp
    lemon zest
  • 2 Tbsp
    lemon juice, fresh
  • 1/4 c
    olive oil, plus more for brushing
  • 1/4 c
    water
  • 2 clove
    garlic, chopped fine
  • 1/2 c
    pine nuts or walnuts
  • 4
    salmon fillets, 6 ounces each, skin on and deboned

How To Make salmon fillet with herb pesto

  • Pureed basil, parsley, chives, lemon zest, lemon juice, oil, water, and garlic in a blender.

    In a blender add basil, parsley, chives, lemon zest, lemon juice, 1/4 cup oil, water, and garlic. Puree.
  • Nuts pureed into the mixture.

    Add nuts and puree until smooth; set aside.
  • Salmon seasoned and brushed with oil.

    Brush salmon with oil. Season with salt and pepper.
  • Salmon placed on a grill.

    Place salmon grill and cook for 3 minutes with the lid open.
  • Rotating salmon 90 degrees.

    Rotate fish by 90 degrees and cook for another 3 minutes.
  • Salmon flipped and continuing to rotate.

    Flip salmon and repeat to cook as before.
  • Flaky Salmon Fillet with Herb Pesto on salad.

    Serve salmon with a dollop of herb pesto. A baby spinach salad goes well with this fish or salad of your choice and crusty dinner rolls.
