This is one of my toddler's favorite food. She likes it without salt, though. It's good for snacking too. To make it easy, freeze salmon for about 30 minutes prior processing in food processor.

Ingredients For salmon-carrot nuggets

  • 12 oz
    salmon fillet
  • 3/4 c
    finely shredded carrot
  • 1 tsp
    sodium-free chicken bouillon granules
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    onion powder
  • 1 tsp
    minced italian parsley
  • 1 tsp
    minced chives
  • 1/4 tsp
    salt
  • 1/8 tsp
    ground white pepper
  • 1/2 c
    yellow cornmeal
  • 2 Tbsp
    vegetable oil

How To Make salmon-carrot nuggets

    Cube salmon fillet and put in food processor; process until nearly smooth. Transfer to a bowl; add the next 8 ingredients (carrot through white pepper). Stir until well combined. Shape into nuggets. Roll nuggets in cornmeal

    Heat oil in non-stick skillet over medium heat. Add nuggets; cook about 3 minutes per side or until lightly browned
