This sauce is really good with a lot of things besides Just Fish. It's awesome over all kinds of vegetables and also with chicken. I will often make the sauce and we will use it as a dipping sauce for chicken fingers.

Ingredients For poached salmon with a mustard dill sauce

  • 3/4 c
    sour cream
  • 1/4 c
    dijon mustard
  • 2 1/2 tsp
    dill, dried
  • 1 tsp
    onion powder
  • 1/2 tsp
    sugar
  • 4
    salmon fillets
  • 3 c
    water
  • 1/2 c
    white wine vinegar
  • 1/2 sm
    onion, sliced
  • 1 stalk
    celery, sliced
  • 1
    bay leaf
  • 1 tsp
    peppercorns
  • Sprinkle
    dry parsley, to garnish
  • To taste
    salt and pepper

How To Make poached salmon with a mustard dill sauce

  • 1
    Combine sour cream, mustard, Dill. onion powder and sugar in a small bowl and mix until creamy. Cover and refrigerate at least half an hour.

    Combine water, vinegar, onion, celery, bay leaf and peppercorns in a large pan or skillet. Bring to a boil over high heat and boil for five minutes. Reduce heat to low and simmer five minutes.

    Carefully add the salmon fillets to the water mixture and simmer for 10 minutes or until fish flakes easily with a fork. Remove from pan and serve topped with sauce, a sprinkle of dry parsley and salt and cracked black pepper to taste.
