Ingredients

  • 8 oz
    whole wheat angel hair pasta
  • 4 c
    clenaned baby spinach leaves
  • 1-/12 c
    cherry tomatoes, halved
  • 3 tsp
    olive oil
  • 1
    onion, finely chopped
  • 1-1/2 lb
    medium shrimp, peeled, deveined, tails removed
  • 3 tsp
    minced garlic
  • 1/4 tsp
    crushed red pepper flakes
  • 1/2 c
    low-sodium chicken broth, or you could use white wine
  • 1/4 c
    low-sodiume chicken broth
  • 1/4 tsp
    salt
  • 1/8 tsp
    pepper
  • 3 Tbsp
    chopped parsley
  • 2 Tbsp
    butter

How to Make Healthy garlic shrimp

Step-by-Step

  1. Cook pasta as directed and drain. Return to pot. Stir in spinach, tomatoes and 2 tsp oil. Cover.
  2. In lg skillet, heat 1 tsp oil over medium heat. Add onion, cook 1 min. Add shrimp, garlic and red pepper flakes. Cook, stirring for 2 mins.
  3. Stir into skillet, the broth, or wine plus the other broth, salt and pepper. Cook, until shrimp is pink. Remove from skillet. Stir in parsley and butter until butter is melted. Add whole mix to pasta and toss to mix.
