father's day "oyster fest"

4 dozen bed raised Eastern Shore Oysters from my Sister-in-Law's Oyster bed in Lower Maryland. Steamed, shucked, Rock-a-feller'd, and just plain served with melted butter....OMG incredible 2 bite Oysters !!!!!

Ingredients For father's day "oyster fest"

  • 4 dozen lg
    fresh oysters in the shell (eastern shore)
  • 1 stick
    land o lakes butter
  • 1 pkg
    fresh baby spinach
  • 1 pkg
    bacon, cooked
  • 1 c
    fresh grated parmesan/asiago cheese
  • 1 lg
    fresh lemon

How To Make father's day "oyster fest"

    Heat your grill to medium heat, add fresh oysters to a disposable aluminum roasting pan. Cover with 4 cups of water with the juice of 1 fresh lemon squeezed over the top, cover with foil and place on the grill for 20-30 minutes.

    While the oysters are steaming away, go ahead and fry your bacon and drain on paper towels. Save half of the bacon fat and saute your spinach until cooked, chop your cooked bacon and add to the spinach mixture, remove from heat and sprinkle with fresh parmesan.

    Remove your oysters from the grill put on your trusty "shucking glove" and bust these bad boys (and girls)open save half for the butter sauce and half for the Rockefeller which I top with the spinach mixture and sprinkle liberally with more fresh parmesan.
