When I was a young teenager I spent the summer in Corpus Christi TX with my mom. She would take me to the Tule Lake Lift Bridge and we would crawl down the big rocks to the water’s edge where we would drop chicken necks on a rope into the water and when a Blue Crab attached we slowly raised the rope and dipped a pole net below the crab and just as the crab neared the surface of the water it would drop off into the net. Mom made us a crab boil party after returning home. She boiled them and piled the cooked steaming crabs onto brown paper bags that covered the table. It was a sight to see.

Ingredients

  • 1
    crab boil seasoning packet (any brand)
  • 4-6
    crabs per person
  • 1 large
    kettle of water
  • small
    individual bowls of melted butter

How to Make Corpus Christi Crab Boil

Step-by-Step

  1. Put the large kettle of water, with the crab boil seasoning packet on the stove and bring to a boil. Cook the crabs in batches by dropping the fresh live crabs into the boiling water using tongs, 3 or 4, at a time, depending on their size, and the size of the kettle, to totally submerge, however, do not overcrowd. Let the water come back to a boil.
  2. Cook until the shells turn red about 5 to 6 minutes. Remove from the water. Do not overcook. Allow the water to come back to a boil and continue until all your crabs are cooked. Allow to cool a little before handling crabs.
  3. Note: This is a photo of the Tule Lake lift bridge on the Corpus Christi Shipping Channel. It has since been demolished.

    Live crabs can be purchased along coastal areas. A Crab Boil would make a fun summer party. Put the cooked crabs on a table covered with brown paper bags or newspaper and let everyone tear into their own crabs. You will have to supply the crab cracking utensils. We used pliers and hammers. I would imagine that there are special tools that can be purchased for crab cracking.

    The individual bowls of melted butter is for each person to dip their crab meat in.

    I wish Blue Crab could live in our hill country river. The coastal salt water in Corpus is a 4 hour drive and there is definitely no live crab to be seen around here.
