Ingredients For bob's catfish soup...

  • 1/2 lb
    bacon, cooked
  • 2 lg
    onion,chopped
  • 2
    celery stalks
  • 2
    carrots, chopped
  • 2 lb
    catfish filets,cut into large chunks
  • 1 Tbsp
    chopped parsley and thyme
  • 1 c
    white wine, medium
  • 3 lg
    eggs
  • 2 Tbsp
    butter
  • 3 Tbsp
    flour
  • 1 c
    half and half
  • 2 md
    potatoes,peeled and diced.

How To Make bob's catfish soup...

    In a large dutch oven fry bacon till chrisp.Remove and reserve.. Now add onoin selery,acrrots,and potatoes.cook till soft... Now add fish salt and pepper to taste. Parsley and thyme. Cover with wine,and simmer till fish is tender buy not breaking up..

    In a bowl mix eggs,butter,half-half and flour.mix and cook over med heat. once heated add to soupalong with bacon... Heat soup gently till thickened. Note you may have to adjust seasoning. Serve with tosted bread...
