This recipe comes from a friend in New Orleans. I'm a huge mushroom fan, so I really enjoy this recipe.

Ingredients For baked trout

  • 1/2 lb
    fresh mushrooms, sliced
  • 2 Tbsp
    butter, melted
  • 1 c
    soft wheat-berry breadcrumbs (i use pepperidge farms bread)
  • 1/8 tsp
    salt
  • 1/8 tsp
    pepper
  • 4
    trout fillets (4 ounce)
  • 1/4 c
    plus 2 tablespoons butter, melted and divided

How To Make baked trout

  • 1
    Place the mushrooms in an ungreased 11 x 7 x 1 1/2 inch baking dish. Drizzle with 2 tablespoons melted butter. Set aside.

    Combine the breadcrumbs, salt, and pepper in a shallow dish; stir well.

    Dip the fillets in 3 tablespoons melted butter and dredge in the breadcrumb mixture.

    Place the fillets on top of the mushrooms. Drizzle with the remaining 3 tablespoons melted butter. Bake, uncovered, at 375 degrees for 20 minutes or until the fish flakes easily when tested with a fork.
