Here's my recipe for Turkey Joes, my version of "Sloppy Joes" I make with leftover turkey. (can also use leftover chicken) Easy to make and friendly on the budget. Enjoy!

Ingredients For turkey sloppy joes

  • 1 Tbsp
    plus one teaspoon vegetable oil
  • 1 c
    chopped onions
  • 1 c
    chopped red bell pepper
  • 1 clove
    garlic, minced
  • 1 lb
    cooked turkey (can also use cooked chicken)
  • 1 tsp
    dried oregano
  • salt and pepper to taste
  • 1 lb
    can diced tomatoes (reserve liquid)
  • 4 oz
    chopped mushrooms
  • 1 Tbsp
    all purpose flour

How To Make turkey sloppy joes

    Heat oil in a large skillet over medium heat. Add onions, red pepper and garlic. Cook until tender, about 10 minutes.

    10 minutes. Add turkey, oregano, salt and pepper. Cook, stirring, until cooked through and flavors have blended

    Reduce heat to low. Add tomatoes and mushrooms.

    Stir flour into reserved tomato liquid. Pour over turkey mixture. Simmer, covered, 20 minutes, stirring frequently.

    NOTE: Can be served over rice, noodles or hamburger buns.
