Ingredients

  • 2 Tbsp
    cooking oil
  • 1 c
    chopped onion
  • 2 clove
    garlic, minced
  • 1 1/2 lb
    boneless skinless chicken breasts, cubed
  • 4 c
    chicken broth
  • 3 can(s)
    (14.5 oz) great northern beans, rinsed and drained
  • 1 c
    corn kernels, fresh
  • 1 1/2 c
    fresh pineapple chunks
  • 2 medium
    jalapeno peppers, seeded and chopped
  • 8 medium
    tomatillos, husked and chopped
  • 1 can(s)
    (4 oz) green chili peppers
  • 1 tsp
    ground cumin
  • 1 tsp
    dried oregano flakes
  • 1/3 c
    thousand island salad dressing
  • 2 c
    shredded monterey jack cheese

How to Make Tropical Chicken Chili

Step-by-Step

  1. In a Dutch oven, heat oil over medium heat. Add onion and garlic. Cook onion is soft. Add chicken; stir and cook until chicken is no longer pink. Add broth, beans, corn kernels, pineapple, Jalapeno peppers, tomatillos, green chili peppers, cumin and oregano. Bring to boil; simmer for 15 minutes. Stir in salad dressing; cook for another 2 minutes. Remove from heat. Serve in individual bowls, sprinkle with cheese.
